Ingredients
– ⅓ cup red onion, diced
– Juice of 2 limes
– 2 garlic cloves, minced
– ¾ teaspoon sea salt
– 3 large avocados, ripe
– 2 roma tomatoes, diced
– ½ cup chopped fresh cilantro
– 1 jalapeño pepper, seeded and diced
Instructions
1. Add red onion, lime juice, garlic, and salt to a large bowl.
2. Halve, pit, and scoop the avocado into the bowl. Mash with a fork to desired texture.
3. Stir in tomatoes, cilantro, and jalapeño.
4. Taste and adjust lime juice or salt if needed. Serve immediately.
Notes
You can mash the avocados using either a fork or a potato masher—just depends on how you like your guac! For a super smooth dip, the potato masher works wonders. If you’re a fan of a chunkier, more rustic texture (like I am), go with a fork.
Short on avocado? If yours are smaller or you’re a bit low, don’t worry—just mix in a spoonful of sour cream to stretch it a bit. It adds creaminess without overpowering the flavor.
One of my favorite little tricks: soak the onions and garlic in lime juice first. It helps tone down the sharpness and brings out a softer, more balanced flavor. Just stir together the red onion, garlic, lime juice, and salt in the bowl, and let it sit for about 10 minutes before adding the avocado. Trust me, it makes a difference!
